Reverse osmosis has been developed specifically for winemaking and the corresponding devices aim to separate the water from the must. Removing the water causes the product to concentrate without losing any of its components. This means that its sugar content, colour, aroma and acidity are increased by the concentration. This is the difference between this process and simply adding sucrose to increase the sugar content.

Using reverse osmosis, water passes through a thin membrane, its thin porosity allows water molecules to pass through while retaining the other components of the must. The high flow rate added by the equipment keeps the pores open to allow for continuous operation with careful handling of the must. The result is to balance out the differences that arise depending on the year and to enhance good qualities through the concentration of the must.
